Abstrakt
The aim of the study was to compare fat and total cholesterol content in the muscles
of females and males of perch (Perca fluviatilis L.) caught in fall and spring from Gopło Lake.
Analyses were carried out on 10 females and 10 males in each season. Fat was extracted from
meat with the skin using the procedure of Folch et al. (1957) and content of total cholesterol was
determined by UV-VIS method according to Liebermann-Burchardt (StrzeŜek i Wołos 1997). Fat
content was higher in the muscles of perch caught in fall, then in fish from spring. The mean
value of fat in the meat of females and males caught in fall was 0,50 and 0,48%, respectively
but differences were not statistically significant. There was no statistically significant differences
in the mean value of fat in the meat of females (0,38%) and males (0,34%) caught in spring.
The mean content of total cholesterol in muscles of females of perch caught from Gopło was
higher in fall (67,11 mg 100 g-1), than in females from spring (47,76 mg 100 g-1), and this values
differed statistically significant. Analysis indicated that there were no statistically significant
differences in mean values of cholesterol in males from fall (45,93 mg 100 g-1) and in the
muscles of males caught in spring (53,34 mg 100 g-1). The mean content of cholesterol in
females was higher than in males and it was respectively 57,44 i 49,63 mg 100 g-1, and this
values differed statistically significant.
