Katedra Biochemii WSRFreezed and partly rotten white beets cansed serions olistuzbances in the technological process of sugar during the beet campaign in 1965/66. They have not been of use as fodder either. Beets were examined with reference to poisonous saponin content. For analysis the thin-layer chiomatography nothod was applied. Silica aeld gel in the system: isapropanot - - water - formic acid (70:24:6) was used to separate the saponines. The developing salution consisting of animal blood suspended in gelatine was layered on а plante. The quantity of saponines was determined from the size of blood stains chemolysed by saponines which diffused from the plate to the defecting layez. Juices and eetracts of white beets have shown the quantity of saponines highly exceeding the norm, namely: natural juice 0,16%, diffusive juice 0,25% and alcohol extract 0,49%. In conclusion a postulate may be put forward of carrying analyses of white beets also on the content of surface active components.
